Beer Can Chicken
A great way to prepare chicken on the grill or in the oven. The rub makes this chicken one of the best I’ve tried.

  1. Rinse chicken and pat dry with paper towels.
  2. Mix the dry spices together in a small bowl
  3. Rub the inside cavity of the chicken with half of the spice mixture. Using your fingers separate the skin and rub the spice mixture on the meat of the chicken with the rest of the spice mixture.
  4. Open the beer and drink about 1/2 cup. Drop the smashed garlic cloves into the open beer can.
  5. Place chicken, open end down, over the open beer can.
  6. Place chicken, standing up onto the grill. You will want to use indirect heat with the lid on the grill. Cook until the internal temperature of the chicken reaches 165 degrees at the thickest part. Should take about an hour.
  7. If you would prefer to use your oven, place the chicken into a large pan, standing up. Bake at 400 degrees for 10 minutes and then turn the oven down to 350 degrees. Bake for another hour or so until the internal temperature reached 165 degrees.
